The term hijack in this game refers to the specific position at the table. More precisely, the hijack poker position is the player who is two positions counterclockwise from the button and just on the right of the cutoff.
It’s considered one of the late positions. It derives its name from players “hijacking” it and taking the advantage away from the button and cutoff positions by making an opening raise.
